Today we had an early start–but for good reason! We headed out of our hotel at 7:30AM to prepare for a morning with Parmegiano Reggiano, the king of cheese! Our group was led through the entire process–from cow to cheese case–and I think it’s safe to say we were 100% ready for the taste testing at the end!

An incredible process brings Parmegiano Reggiano to our dinner tables and there is no other cheese like it in the world.

A quick break at a local outlet mall allowed our guests to stretch their legs and take a quick walk around outside enjoying a beautiful, yet brisk, start to October in Parma.

From there we headed to Toccalmatto, an Italian craft brewery. Mossimo, our very informative guide, led us through the entire process of how their beers are made, broke down the differences in craft vs. international breweries and kept the tastings flowing! Even our most adamant anti-beer guests tried (and enjoyed!) the beer here!

Our final evening in brought us a lovely feast shared among everyone! 4 courses–Herb and Ricotta Tortelloni, Short rib stuffed Cappeletti, Beef tenderloin and mushrooms with tomatoes, and fresh Crema gelato. We really don’t think the meal could have been any better!

Tomorrow we head to Cinque Terre and could not be more excited 🙂
