What is better than butter? How about cultured, cave-aged mozzarella butter? Frying an egg, melting for popcorn, or simply spreading on a delicious bread, we think you are going to never look at butter the same way again.
If you’ve ever stretched our Capo Mozz at home, you’ll know that, once the cheese is made, you’re left with a bowl of seemingly useless salt water, or what we call make water. Let that bowl sit out and you’ll also notice a layer of liquid butterfat collect at the top. That singular layer of pure, golden goodness, that blossoming butterfat, is what we use to make our Mozzarella Butter.
We stretch a lot of cheese in-house and end up with quite a bit of butterfat at the end of the day. We’ll hand skim the fat away, whip it good, and shape it up (while listening to Devo, of course). After we’ve gotten our groove on, we let our Mozzarella Butter dry out in the cave to give it time to mingle with the savory aromas from our aged cheeses, and pack it up just before it overstays its welcome.
Melt some Mozzarella Butter on your toast in the mornings, use it as a base for all your favorite savory dishes, or melt and pour it over homemade popcorn for the ultimate movie snack experience. (We cannot be held responsible if your house becomes the permanent spot for movie night.)
Different from a sweet cream butter, this cultured butter has a bold flavor reminiscent of our cheeses and can be used like a clarified butter or ghee would be used in cooking.
