Siciliano (si-chi-li-ano) is our take on the Ragusano DOP cheese, a massive ingot of golden brown cheese originating from the south-eastern tip of Sicily. With a technique best described as an angry cheesemaker’s attempt to stretch unruly cheese, the curd for this massive form is put through a crucible of torrid whey, steaming water, and likely a string of curses from the cheesemaker as the tight, battle-hardened curd is hand stretched all at once. It’s truly a labor of love.

Hung and aged for 10-14 months, this cheese takes on a uniquely piquant, fruity, and nutty taste similar to a younger Parmigiano-Reggiano, and forms a semi-hard texture accompanied by a subtle presence of cheese crystals. It’s like eating wild PA honeysuckle and fresh milk, but without going through all the trouble of foraging or heading out back to milk Ol’ Bessy.

As our industrialized world moves farther away from the traditional farmstead, this style of cheese is ever increasingly rare to find. With our homage to Sicilian history and agriculture, we aim to honor our own PA agricultural heritage by using Siciliano as a literal building block to support local dairy farms everyday.

Caputo Brothers Creamery uses only Animal Welfare Approved, non-GMO feed, pasture-based milk from local, family-owned dairy farms.  We are committed to paying a fair price to farmers for the high quality milk they produce!
