"Kind of a Big Dill" Gouda

We have not only mixed a punchy, zesty blend of dill pickling spices into the curd before pressing, but we have crafted a cheese that delivers that nostalgic "snap" of a classic deli pickle finished with a smooth, melt-in-your-mouth texture. It’s herbal, savory, and undeniably addictive—pickle lovers, your search for the perfect snack ends here!
While you may think of Gouda and picture the red wax-coated form in the supermarket, the term "Gouda" refers more to the style of cheesemaking than the actual cheese. Similar to our Gouda-style beer cheeses, this is a "washed curd" cheese, but rather than washing the curds in beer, these are washed with water. This helps remove extra lactose, resulting in a sweeter, milder cheese that perfectly balances the bold, briny dill spice. The curds are then pressed into a round mold and brined for 3 days before spending a few weeks in our aging cave.
A Labor of Love & A Graduation Milestone
At Caputo Brothers Creamery, we’ve always said that cheese is a labor of love, but for us, it’s also a family legacy. We’ve named this new creation "Kind of a Big Dill" in honor of the eldest Caputo brother, Giovanni, graduating high school!
Gio didn’t just start working here; he grew up here. We’ve watched him grow from a curious kid into a young man who truly thrives at the creamery, learning the craft of the cave before he could even reach the top of the vats. This fall, Gio is heading south to the University of Alabama to study Business. While the creamery will feel a little quieter without him, we are sending him off with the same boldness and zest found in this cheese! Roll Tide, Gio. You’ll always have a home at the creamery.
